Potatoes have always had a bad reputation when it comes to health. The common argument is that they are high in carbohydrates. Although it is true that potatoes are high in carbs, they only become harmful when fried. Eating the potato with the skin is extremely beneficial in boosting your immunity. Sweet potatoes are one of the unsung heroes of a balanced diet. For a reasonable number of calories, you get a load of nutrients.

Sweet potatoes are rich in vitamin a, vitamin c, calcium and potassium. One serving of sweet potatoes also contain 3 gm of dietary fiber, 2 gm of protein, 27 mg of magnesium and 11,552 mcg of carotenoids.

The skin of the potato serves as a first-line fortress against harmful bacteria and viruses. To stay strong and healthy, your skin needs vitamin A. Vitamin A plays a major role in the production of connective tissue, a key component of skin.

Eat foods rich in beta-carotine, which your body converts to vitamin A. Sweet potatoes are rich in beta carotine. Other foods containing beta-carotene are papayas, carrots and pumpkins - all orange colored.
